So far, so good. Die off symptoms are completely gone and I feel good. I'm still craving sweets, but the feeling of starvation has gone away. I hated feeling hungry after eating a full meal. Ideally, I need to be eating several small meals throughout the day, that's always worked for my metabolism, but I can't cook 6 times a day. I made a quick-ish lunch...Curry in a Hurry. It was majorly delish and I'll post the recipe now:

3 chicken breasts, cubed
2 or 3 T coconut oil
1 chopped onion
1 green pepper julienned
1 red pepper julienned
4 T curry powder
1/2 t sea salt
1 T flour, I omit this
1 t chopped fresh ginger
1 cup chicken broth
1&1/2 cups frozen peas
1-190z. can chick peas or lentils

Brown the chicken in the oil and then add everything except the peas and lentils and simmer for about 20 minutes. Add the frozen peas and cook for about 10 minutes more. Just before serving add the lentils or chick peas and heat just until warmed.

I didn't use the chickpeas or lentils, I prefer it over brown rice. You can also adjust the curry to your taste. Fast and easy and delicious.

P.S. If you are sensitive to peppers you can use more onions or celery instead.

I didn't use the lentils or chick peas and ate it over 1/4 cup (dry) of brown rice. That was the perfect size for a lunch portion. I used ghee instead of coconut oil, because I haven't found it anywhere except Down to Earth, but they're charging $14 and some change for a jar that would go too fast.
